Super Raw Salad Recipe

GLUTEN-FREE | DAIRY-FREE | VEGAN

Serves 4

Doesn’t colourful food make you feel so happy? And doesn’t colourful AND healthy food make you even happier? We’ve managed to incorporate a whole bunch of colours into this raw salad for ultimate goodness. And if you’re not a salad person, this isn’t a normal green salad, this packs a punch! It’s filling and fresh and makes you feel GREAAAAT.

Super Raw Salad

Inspired by Simply Health and their guide to the best foods to eat for a healthier smile we stuffed this salad full of purple cabbage which is rammed with vitamin C and vitamin A. Vitamin C helps prevent gum disease and vitamin A is essential for developing and maintaining healthy teeth. You can also lose vitamins if you cook it too much which is why we’ve got ours in our salad in its pure, unadulterated form!

For this recipe, you can either use a mandolin or a sharp knife. If you’re using a mandolin, make sure you’re careful! It’s hard to spot bits of finger in amongst the salad…

Ingredients
  • 1/2 purple cabbage
  • 1 courgette
  • 4 radishes
  • 1/2 pomegranate
  • 2 tbsp seeds
Method
  1. Thinly slice the cabbage and radishes. If you have a mandolin, use it but be careful! If not, a sharp knife will work but again, watch out for fingers.
  2. If you have a spiraliser, use that on the courgette. if you don’t, that’s not a problem – you can just as easily grate it, or chop it finely.
  3. Put everything you’ve chopped so far into a salad bowl.
  4. De-seed the pomegranate and add to the salad with the seeds.
  5. Mix everything well.
