MT Real’s Tropical Sorbet

June 17, 2016 by Eliza Flynn Leave a Comment

GLUTEN-FREE | DAIRY FREE | VEGAN  | REFINED SUGAR-FREE

Serves 2 (generously)

When the sun is shining and you’re getting a little toasty, one of our favourite go-to coolers is sorbet. But we’re not talking the shop-bought kind that’s laden with preservatives and extra sugar, we’re talking about a sorbet you can make yourself!

Tropical Sorbet

Using whole fruits, there is nothing nasty in MT Real’s healthy twist on this summer favourite; it’s bursting with anti-inflammatory, vitamin C-packed tropical fruits, and is seriously simple to whip up on those hot summer days. Just freeze pineapple, banana and papaya in advance and then let your blender do the hard work.

The banana gives it a creamy consistency whilst the pineapple adds the sweetness and the papaya and lime balance it out. As for the passion fruit, well that’s just the proverbial icing on the cake!

Make this just before you want to serve it as it will turn into an ice lolly if kept in the freezer. Although that will still be just as delicious…

Ingredients:

  • 1/3 frozen pineapple
  • 1 frozen papaya
  • 1 frozen banana
  • Juice of 1 lime
  • 1 passion fruit to top

Method:

  1. Place the frozen pineapple, banana, papaya and lime juice in a blender. Blitz until you have your smooth, slushy sorbet.
  2. Divide into bowls, top with some fresh passion fruit seeds and enjoy straight away.

NOTE: We freeze triple the amount of pineapple, papaya and banana all chopped up and ready to go. Then you can take out one portion of fruit at a time to be blended whenever those tropical fruit cravings hit.
