“Wickedly Moreish” Chia Chocolate Pudding

GLUTEN-FREE | DAIRY-FREE | VEGAN

Serves 2 (unless you’re greedy)

Pudding or post-workout snack? We’re not too sure but this chia chocolate pudding / snack works great for both. We’ve pumped this full of antioxidants, protein and yumminess – and if you don’t have all the ingredients, no need to worry as you can swap things in and out as you please just as long as you keep the main ingredients in it (raw cacao, banana, almond milk).

Chia Chocolate Pudding recipe

Whether you’re walking into the house covered in sweat after a good run or you fancy something delicious for pudding then this is for you. You can whip it up in an instant or make it before you head out (make sure you keep it refrigerated – it’ll last a good few hours). It’s also vegan and packed full of great things. Best of all, you can also add in your own ingredients too and mix it up a bit. Don’t like peanut butter? Use almond instead or miss it out.

We’ve also added Chia seeds in – these are packed full of fibre (which lowers cholesterol) and antioxidants (which protect the body from free radicals and ageing. Plus, they produce an amazing gel around them which helps slow down digestion, leaving you feeling fuller for longer and regulating your blood sugar so your pancreas isn’t overworked. Unlike flaxseed, you also get the benefits when you eat them whole – no grinding necessary so you can add them to pretty much anything!

Ingredients
  • 1/2 frozen banana
  • 1 tbsp raw cacao nibs
  • 1 tbsp raw cacao powder
  • 1 cup of almond milk, unsweetened (you can also use soya milk or coconut milk too)
  • 1 tbsp protein powder (we used pea protein)
  • 1 tsp of lucuma powder
  • 1 tbsp almond or peanut butter
  • 1 heaped tbsp chia seeds (we got ours from the resourceful Detox Your World)
Method
  1. Blend blend blend! You can either use something like a Nutribullet or a hand blender (they cost from £5 from supermarkets).
  2. Pour into 2 cups and eat immediately.

We buy our Chia seeds from Detox Your World – as a health food store, their delivery is reliable, their prices are reasonable AND they have everything we need!
